Vin Santo is a tradition at the Estate. Trebbiano Toscano and Malvasia grapes are carefully placed on straw mats in a highly ventilated room until the noble mold begins to form on the skins, which occurs usually after 3 months time. After a very delicate pressing, the juice is placed in petit barriques that vary in size from 50 to 125 liters, for approximately 36 months. A one year bottle refinement is normal practice prior to release.
“San Bartolomeo” has a splendid amber hue and evokes intense notes of dried plums, apricots, dates, toasted almonds and honey. It finishes off with a persistently sinuous and honey sweet palate.
